I am struggling to understand or override this code. I just want to override one variable inside a function file that is located in a subfolder like this: /functions/post_videos_functions.php

and the function wrapper looks like this:

add_action('video_posts_submition_success_post_content','post_videos_submition_success_post_submited_content');
function post_videos_submition_success_post_submited_content(){

}

Inside this function is a lot of code, but I only want to override this one variable:

$video_link='<video width="100%" height="100%" src="'.$link.'" controls></video> '; 

I tried just copy pasting the whole file into the same folder structure in the child theme e.g. child-theme/functions/post_videos_functions.php. This did not work though.
